Ingredients: 1 large diced onion 2 large diced potatoes 4 chopped carrots 1 large handful of shredded corainder or 2 desertspoons minced from a jar 1 stock cube 1 desertspoon sweet chilli sauce or curry powder salt and pepper water greaseproof paper |
In a heavy bottomed pan, sweat off the onion in olive oil for 2 mins and add the potatoes ans carrots. Place a sheet of greaseproof paper over the veg and put a lid on the pan. Simmer for 30 mins until the veg is soft. Add the coriader, stock cube, spices and seasoning and stir. Add water until you get a suitable consistency and simmer for a further 20 mins. Blend the ingredients together and serve. |
