Carrot and Coriander soup       Serves 4
1 large diced onion
2 large diced potatoes
4 chopped carrots
1 large handful of shredded corainder or 2 desertspoons minced from a jar
1 stock cube
1 desertspoon sweet chilli sauce or curry powder
salt and pepper
greaseproof paper
In a heavy bottomed pan, sweat off the onion in olive oil for 2 mins and add the potatoes ans carrots. Place a sheet of greaseproof paper over the veg and put a lid on the pan. Simmer for 30 mins until the veg is soft. Add the coriader, stock cube, spices and seasoning and stir. Add water until you get a suitable consistency and simmer for a further 20 mins. Blend the ingredients together and serve.
You can vary this recipie by adding the juice and rind of one orange instead of the corriander. This then becomes Carrot and Orange Soup
