Prawn Ceviche        Starter Serves 4
48 peeled uncooked prawns,
1 deseeded red chilli pepper chopped,
12 fresh limes,
chopped fresh coriander
Juice the limes and place in a bowl with the chilli and coriander. Peel the prawns and add to the liquid. Leave in the fridge overnight. (The citric acid in the limes cooks the fish). Serve with crispy bread.
