Chickpea Burgers       Serves 4
salt and pepper
1 tin of Chickpeas
1 onion (finely diced)
1 carrot (finely chopped)
1 red pepper (finely chopped)
1 inch root ginger (peeled and diced)
1 teaspoon cumin seeds
1 red chilli fineld diced (optional)
1 dessertspoon soya sauce
1 dessertspoon vinegar
1 dessertspoon brown sugar

Burger buns, cheese, gherkins etc
On a medium heat fry the cumin seeds, onion, pepper, carrot ginger and chilli. Drain the chickpeas and add to the veg along with the soy sauce, vinegar and sugar. Cook for 30 mins. Remove from the heat to a bowl. Using a masher break them up into something looking like mince meat and leave to cool. Using your hands form them into burger shapes and fry on a high heat for 5 mins or until brown. Turn over for a further 2 mins.

Build your burger to suit your taste. Eat with salad, chips, etc.
