Dijon Chicken        Serves 4-6
1 large diced onion
15 mushrooms cut in half
3 diced smoked rashers
4 cubed chicken fillets
4 crushed cloves garlic
2 dsp good Dijon mustard
1 tsp mixed herbs
1 tsp salt and pepper
1 medium tub cream
1 dsp olive oil
1 glass sweet white wine
Fry the onion in the oil for 3 mins in a casserole dish, add the rashers, chicken and garlic and mix well. Cook for 3 mins and add the herbs, salt and pepper, then add the rest of the stuff. Cover and simmer very gently for about 40 mins until the chicken is cooked.

Serve with spuds and lots of bread to soak up to sauce.
