Lemon Crayfish Pasta  

1 tub of Crayfish tails (or cooked prawns in brine)
1 diced red pepper
1 small tub cream or better Creme Fraiche
1 small chopped onion
1 3 cloves garlic
juice and rind of 1-2 lemons
.Drain the crayfish well. Add the lemon juice with them to a bowl with some herbs, salt and pepper. Set aside. Fry the onions for 4 mins and add the garlic, lemon rind and pepper. Fry for a further 3 mins and add the cream. Lower the heat and cook for 3-5 mins until the sauce starts to thicken. Remove from the heat and add the crayfish. Stir to heat them through. Add your favorite cooked pasta. Stir well and serve after letting sit for 2 mins.
