Lemon flavoured Mushrooms      

A simple starter of served on bread or a side dish
1 kilo of sliced mushrooms
the juice and rind of 2 lemons
salt and pepper
Fry the mushrooms without any oil, just adding the seasoning. The mushrooms should release a little liquid and begin to reduce in size and browning at the same time. Add the lemon rind and juice and fry for a further 3-5 mins. Serve immediately.
