Eva's Lentils with Chorizo

2 cups of lentils
1 onion or leeks
3 cloves of garlic
1 green or red pepper
1 large carrot in chunks
1/2 full chorizo cut into chunks
1 chopped large potato
oilve oil
1 tsp paprika (either sweet or spicy)
bay leaf
In a pot (or better still a pressure cooker), place the lentils and cover with 2 fingers width of water. Add the carrot, potato, onion, chorizo, 2 cloves of garlic whole, pepper, bay leaf and salt. Cover and cook for 30 mins until the veg is soft or 7 mins in a pressure cooker. In a frying pan fry a diced clove of garlic and add the paprika. Mix this with the lentils and sprinkle with parsley.
