Ingredients: 1 lb diced Pork Steak 6 lamb or beef ribs 3 chicken fillets 1 medium onion 4 cloves of garlic 1 red and 1 green pepper 4 cups chicken stock 1 cup frozen peas 2 cups rice (long grain or basmati) 1 dsp turmeric 1 dsp cumin seeds 1 dsp mixed herbs salt and pepper olive oil |
Pour oil into a large heavy frying pan or casserole dish. Over a medium heat fry the onion for four minutes, stirring gently then add the meat, cooking until it is browned. Remove the meat and add the peppers, turmeric, herbs, salt, pepper and garlic and fry for two minutes. Add more oil if needed. Add the uncooked rice and stir well to coat all the rice in the oil. After one minute add the meat mixture and the stock. Cook on a medium high heat until it boils for five minutes. Cover with a lid or foil and remove from the heat. Leave to sit for at least 10 minutes or until the liquid is absorbed. Stir well and serve immediately. |
