Peppered Steaks        Serves 4
4 lean steaks (fillet or striploin)
3 mushrooms (diced)
1 onion (diced)
2 cloves of garlic (minced)
1 teaspoon Dijon Mustard
1 small tub cream
1/2 glass red wine
1 pinch mixed herbs
Crushed black pepper
Pinch of salt
Coat the steaks well on both sides with the crushed pepper. Fry the steaks to taste on a medium heat and remove from the pan. Fry the onion in the pan for 2 minuites then add the garlic and mushrooms. Fry for another minuite then increase the heat and add the wine, salt and herbs. Boil for 1-2 minuites until the wine reduces then add the cream. Return the steaks to the mixture and continue boiling for another 1-2 minuites until the mixture thickens. Remove from the heat and serve immediately.
