Cod Pil Pil

The typical Basque cod dish offered in every home and restaurant
6-8 pieces of salted Cod
6-8 cloves of garlic whole
1 dsp olive oil
A heavy bottomed non stick pan is essential
The salted cod should be soaked for 2 days, yes 2 days, in water, changing the water once. Then it should be removed an set aside. Fry the garlic on a medium heat until brown. Remove the pan from the heat and set aside the garlic. Place the cod skin down in the pan. You want a little heat in the pan but the pan must be constantly moved from side to side. What happens is a natural gelatine in the fish is released to make a sauce. The process takes about 10 minutes. Make sure to keep moving the pan and turn the fish once. If needed return the pan to the heat for a few seconds if the sauce doesn' thicken. To serve place a garlic piece on each piece of fish.
