Marivi's Pototo and Bacon Souffle       Serves 4
3 medium potatoes diced
2 cloves of Garlic chopped
1 large onion chopped
3 bacon rashers chopped
1 desertspoon white flour
1 egg
1 cup milk
Fry the potatoes in olive oil until soft and place in a baking tin. Fry the onions for three mins and add the bacon and garlic. When cooked, after 7 mins or so, add the flour and mix through until all the oil is absorbed. Bit by bit add the milk to create a thick bechamel sauce. Mix this through the potatoes. Separate the egg and whisk the white to form white peaks. Gently fold in the yolk and cover the potato mix with it. Place under a medium grilll until golden.
