Ingredients: 4 Rainbow Trout fillets 1 Large Leek 2 cloves of garlic 1 red and 1 green pepper 1 glass white wine 1 small tub cream 2 dsp crème de cassis (optional) 1 tsp mixed herbs salt and pepper |
Place the fish in a casserole dish. Cover with the leeks and peppers cut into long strips. Mince the garlic and sprinkle on top with the seasoning. Finally pour the liquid ingredients on top. Put lid or tin foil on top and bake on a high heat for 15-20 mins (until the fish loses its pink colouring). Serve with spuds, rice, crisps, naan bread, etc. |
