Stick Coconut Rice       Serves 4
2 cups Basmati Rice
4 Cups water
1 onion
2 cloves garlic
1 red pepper
assorted other veg eg. corn, peas, carrots, etc
1 inch fresh ginger
1 block creamed coconut
1 dsp curry powder (optional)
salt and pepper
Fry the onion in 4 dsp olive oil for 2 mins on a high heat. Add the remaining veg and curry powder and fry for 2 mins. Add the uncooked rice and coat well in the oil. Add the water and coconut block in pieces, cover with a lid, and bring to the boil. Don't stir often, just enough to make sure the rice doesn't stick to the bottom of the pan. After letting boil for 5 mins, take off the heat, stir gently and leave covered for 15 mins until all the water is absorbed. Separate the rice with a fork just before serving.
