Szechuan Sweet and Sour       Serves 4
1 lb lean diced pork steak
1 diced carrot
1 red and one green pepper
1 leek or 1 medium onion, diced
1 inch peeled diced raw ginger
2 cloves of garlic
For the marinade:
2 dsp good wine vinegar
2 dsps soy sauce
1 dsp honey
2 dsp Brown sugar
1 small can tomato puree
2 dsps (or more) sweet chilli sauce
Mix the marinade ingredients together and leave the meat in it for at least one hour or overnight. Remove the meat from the marinade and fry in a wok (if possible) until browned. Remove the meat and add the vegetables to the wok. Stir fry for 2 mins and then add the meat along with the marinade mixture. Cook for a further 2 mins and serve with rice or noodles.
