Catherine's Tea Brack
1 lb.(450gr) Mixed dried fruit
1 cup of hot tea
2 tablespoons Irish Whiskey
8oz (225 gr) dark soft brown sugar
8 oz (225 gr) self raising flour or ordinary flour
   mixed with a teaspoon of bicarbonate of soda
1 teaspoon ground cinamon
1 teaspoon ground ginger
2 eggs
Rinse the fruit. Make the tea and try to dissolve the sugar oin the tea. Add the whiskey and leave to soak overnight. Next day stir in the flour spices and eggs. Bake in a medium 180 deg (not hot) oven for one and a half hours. Leave to cool on a wire rack.
